Crispy Breakfast Tacos with Eggs, Bacon & Avocado
There is something about breakfast that feels a little better when it doesn’t look like breakfast.
Eggs and bacon will always be classics, but some mornings call for taking those familiar ingredients and turning them into something a little more interesting. These breakfast tacos are exactly that. Crispy tortillas, creamy avocado, smoky bacon, warm salsa, and sunny eggs with those beautiful runny yolks that become part of the sauce the second you cut into them.
They look like the kind of breakfast that took all morning to make, but they really don’t.
I love meals like this because they feel indulgent without being complicated. They’re perfect for a slow Saturday morning, brunch at home, or one of those days when you want to make an ordinary breakfast feel just a little more special.
What You'll Need
For 4 breakfast tacos:
8 slices bacon
4 small flour or corn tortillas
4 eggs
2 ripe avocados
1 small lime
½ cup salsa
¼ cup finely diced red onion
Fresh cilantro or parsley
Salt and black pepper
Olive oil or butter for the pan
If you like a little heat, add sliced jalapeños, hot sauce, or crushed red pepper.
Start With the Avocado
Mash the avocados in a small bowl with a squeeze of fresh lime juice and a pinch of salt. You can make it completely smooth, but I prefer leaving a little texture.
Set it aside while you prepare everything else.
Get the Bacon Crispy
Cook the bacon until it reaches that perfect place between crisp and chewy. Transfer it to a paper towel-lined plate and let the excess grease drain.
You can leave the strips whole or break them into smaller pieces. I like larger pieces because every taco gets plenty of bacon in each bite.
Warm the Tortillas
Heat a skillet over medium heat with just a touch of olive oil or butter.
Warm each tortilla until the edges begin to crisp and little golden spots appear. You still want them flexible enough to fold, so don't leave them in the pan too long.
This small step makes such a difference. A warm, slightly crispy tortilla gives the tacos that restaurant-style texture without requiring much extra work.
Cook the Eggs
Using the same skillet, cook the eggs sunny-side up until the whites are completely set but the yolks remain soft.
Season with salt and freshly cracked black pepper.
And if runny yolks aren't your thing, make the eggs exactly how you like them. Over-medium or scrambled eggs work beautifully here too.
Build Your Breakfast Tacos
Spread a generous layer of avocado onto each warm tortilla.
Add a spoonful of salsa, followed by the egg and crispy bacon. Sprinkle a little red onion over the top and finish with fresh cilantro or parsley.
Give everything one final squeeze of lime.
Then eat them while they're warm.
The best part happens when that yolk breaks into the avocado and salsa. Suddenly everything gets creamy, messy, savory, and completely worth needing an extra napkin.
Make Them Your Own
That's what I love most about a breakfast like this. There really aren't many rules.
Add shredded cheese if you want something richer. Black beans would make them heartier. Roasted potatoes would be delicious tucked underneath the egg. You could replace the bacon with turkey bacon or breakfast sausage, or leave the meat out completely.
And if you're feeding people, put everything out separately and let everyone build their own. It's an easy little brunch spread that looks far more impressive than the amount of work it requires.
A Little Something Different for Breakfast
I'm learning that good food doesn't always need to be elaborate. Sometimes it's simply taking ingredients we already know and love and giving them a different place to land.
Eggs. Bacon. Avocado. Tortillas.
Nothing particularly fancy on its own.
Put them together, slow down long enough to enjoy them, and suddenly breakfast feels like an occasion.
And some mornings, that's reason enough to make the tacos.
